fink the last plug is were it joins to the original car so the black wire would be your ignition in and the brown 1 is the earth... so basically there the only 2 wires you need, wouldnt worry about the temps plugs as i guess youll be using after market gauges

so i should just leave the plugs that only have one wire going to them as they are only used for gauges on the dash, which i havnt got

Copy & Paste from Haynes manuals
I copied and pasted these drawings some time ago.
One for water temp only ESC and one for for water temp and air temp type ESC. They look the same same but plug is wired different.
89fb type is not the one in your drawing, your drawing is for 91fb type
Look at my attachment, think your ESC is the upper one

sorry i cant really work out what is happening in the circuit diagram, does this mean i have a air temp sensor aswell?
also i am using there temperature sender that is already in the zetec thermostat housing, am i right to think this works like a thermistor and changes resistance with the temperature? would this mean it wouldnt matter which way round the sensor is plugged in?

Sorry not been on my PC for the last few days
No its me that is wrong. your drawing is correct for the 89 type ESC
Thought that I recognized the drawing as the two sensor type ESC, I was wrong
Esc starting with 89 is the single temp sensor type ESC
Esc starting with 91 is the dual temp sensor type ESC
Again SORRY for misleading info
