I would take several datum points and find the average midway point based upon them. For example for the front find the midway point between...

    TCA-crossmember mounting holes
Inside of chassis rails in front and behind crossmember
Lay a steel rod between strut top mount hole centres, find the mid-way point and drop a plumb line from the centre to the chassis rail level.

With at least 3 centre points at the front you can find an average and this will be your front centre point. Then, do the same at the rear, using suspension mounting points (eg front leaf spring mounts, rear leaf spring mounts, in between chassis rails). When you have established a rear centre point you can join the front and rear to create a centre line.

This is just my way of doing it. I am sure others may have a different solution.

I agree with you beeRS ... No easy way of doing it but def taking lots of points to get average - just the best way as your not going to get it bang on... These cars were thrown together as I've discovered on my mlk1
Having real trouble lining parts up.
