Correct gaps bonnet to scuttle panel Escort MK2 RS 2000
When I adjust Bonnet to make the gap look okay when I open the bonnet it seems to come back on itself and touch scuttle panel when I adjust it so he doesn’t touch looks too big a gap

Try gently tapping the rear flange of the bonnet panel forward so it’s not at 90*. Just a light touch needed to do this. It won’t need much, probably not even enough to be notable. It’s this flange that is making contact as the hinges rotate backward. Adjust the whole length, this will make the adjustment less visible as well.
Be careful not to dent the edge where it’s folded as that should have the nice rounded corner and will show up if dented.

I have got some more Bonnet hinges coming tomorrow I think the pins are worn out a lot of movement when I am lifting the bonnet it seems to go down a bit before it comes up then touches the corner of the bonnet

Oh yes a worn hinge would would do that. Come and report back on the situation once the new hinges are fitted. Are they “new old” hinges or one of the various new light weight hinges. Be interesting see what you find.
