Could be carbs being lean but just as likely ignition timing too advanced - in-cylinder temps too high, plug acts like a glow plug when ign switched off so pre ignites mixture which rotates the engine which draws in fuel / air and cycle repeats till it cools enough to stop! Bike carbs aren't just about the Main jet - the needles affect low to mid range so also need tuning! Generally an exhaust shouldn't be glowing red unless big load and high rpm!

Massivly retarded timing will also make an exhaust glow and red hot exhaust valves will certainly cause an engine to run on

Like the guys have said check the ignition timing and if that is right i would recomend you send your carbs off to the bogg bros to be set up for your engine. I had a 106 rallye on r6 bike carbs set up by them guys on a bench! When the car was on the rollers the opperator couldn't do anything but balance them as they were jetted spot on.
